Oglesheild, Cornish Kern, Caramelized Onion, Sourdough Melt

A sourdough grilled cheese - oozing with sweet caramelized onion and sinfully gooey Oglesheild & Cornish Kern. You will need two hands for this one!

Method and Ingredients

Ingredients

100g of Cornish Kern finely grated

4 slices of Oglesheild

4 thick slices of quality sourdough bread (We love Vicky’s Bread)

2 tbsp of butter

For the sauce

1 tbsp of mayonnaise

1 tbsp of ketchup

1 tsp of Worcester Sauce

Method

Whisk your sauce ingredients in a bowl and set aside.

Butter one side of each slice of bread.

Mix the caramelized onion and shredded Cornish Kern and microwave for 30 seconds to warm through.

On the opposite side of the bread, spread your sauce and place a slice of Ogleshild on each slice of sauced bread.

Split the caramelized onion and Cornish kern mixture between the two sandwiches spreading on top of the Ogelshild.

Heat a frying pan over medium heat and slowly cook the sandwiches until the bread is crisp. Flip and repeat on the other side, cooking until the cheese has melted and the bread is toasted.

Serve immediately with pickled cucumber and crisps!
