Witheridge, Smoked Salmon & Chive Omelette with Capers & Lemon

A decadent yet simple omelette sure to impress - even if you're just trying to impress yourself.

Method and Ingredients

Ingredients

6 eggs

100g of smoked salmon

2 tablespoons of chopped chives

100g of Witheridge sliced and rind removed

Salt & pepper to taste

1 tablespoon of butter

Lemon wedges

A few capers for garnish

Method

Whisk eggs and add chives, salt and pepper to taste.

Heat an omelette pan over medium heat and add half the butter.

When the butter is just melting add half the egg mixture.

Add half the Witheridge slices to the bottom of the omelette then layer with half the smoked salmon.

Move the top of the omelette over the heat only to cook quicker then flip over cheese and salmon.

Cook omelette for a few more minutes until cheese is melted and egg is just cooked through.

Keep the first omelette warm and repeat steps for the second omelette.

Garnish omelettes with capers and lemon wedges and serve.
