Simply one of the best bries being made in the UK. A farmhouse Brie de Meaux style cheese, it’s buttery with fresh cream when young but develops outstanding rich notes of mushroom and a hint of the farm when ripened, and carries the classic Brie de Meaux nose.
From Fen Farm Dairy in Suffolk, Baron Bigod is the only traditional raw milk Brie de Meaux style cheese produced in the UK. Made from their own heard of Montbeliarde cows, Jonny and his team make the cheese in the morning when the raw milk is still warm, straight from the cow. The cultures are added to the milk and then it is gently gravity fed into small vats just a few metres from their milking parlour, where the rennet is added. The curds are then lovingly hand-ladled into moulds, using traditional pelle-a-brie ladles, hand salted and then aged for up to 8 weeks in a cave-like environment. Like single vineyard wine, farmhouse cheeses take on the flavours of the land, and Baron Bigod tells the story of the farm, the herd and the work that goes into this exceptional cheese. Inside the crust of Baron Bigod, you will find golden butter with creamy edges that leads into a satisfying mushroom and farmyard finish.
Upon completion of your order, you will be asked to select a delivery date. We will always work to deliver to you on your date chosen but sometimes delays may occur. We will contact you if a change to the delivery date is required. At check-out, your delivery charge will be calculated.
All our products are packed in Cheese Cuisine boxes (unless you have ordered a giftbox or added a hamper to your order) with filling (bubble wrap where needed) and gel ice packs when required, to preserve the quality of fresh products.
Your cheese will arrive wrapped in speciality cheese paper and we recommend you refrigerate it as soon as it arrives. We recommend using your cheese within five days of purchase, however, many cheeses will last far longer. To serve, take your cheese out of the fridge, unwrap, and let it come to room temperature before serving (about an hour). To see more about taking care of cheese click here.
Wherever possible, we use environmentally friendly packaging, including recycled and compostable material. We are not big on paper waste; all the information on our products can be found on our website. Jonny has been working on the farm since the age of four, when he would sneak out of bed at 3am and follow his dad to the cowshed to help with the morning jobs. Dulcie shelved her day job as a costume designer to have their two kids and to take part in the marketing and business development at Fen Farm Dairy. Together, Jonny and Dulcie have diversified the original farm with the addition of a pioneering cheese and butter making business. Their focus is on making exceptional artisan products and helping other dairy farmers on their journey to diversification.
