What is Semi-Hard Cheese?

Semi-hard cheese is produced in much the same way as hard cheese, but with a slightly higher moisture content. That means it contains a little more whey and ends up being slightly softer than the most popular hard cheeses. Gouda is a popular example of a semi-hard cheese.
