What is Semi-Soft Cheese / Monastery Cheese?

Semi-soft cheeses are soft, pliable and elastic, but with a little more resistance than soft cheese. They’re usually made in large wheels which are turned regularly to stop them from drying out. Semi-soft cheeses tend to be milder than hard or semi-hard cheeses and are known for their subtle flavours. Semi-soft cheeses are also known as monastery cheeses, as they were commonly made by monks.
