What is Stretched Curd Cheese?

Stretched curd cheese is also known as stretched mozzarella or pull-apart mozzarella. The name ‘stretched’ refers to the way the cheese is made – it’s stretched and kneaded in hot water like dough, which gives the finished product a stringy texture and pulls apart in thin strips when sliced.
