What is Soft Cheese / Fresh Cheese?

Soft cheese, or fresh cheese, has a very high moisture content and is extremely delicate. Soft cheeses tend to be quite mild, with the strongest of them featuring only a hint of tanginess. They also vary in fat content; some are as low as 10%, while others can be as high as 60%. Soft cheeses are often un-ripened. Some of the most popular soft cheeses include mozzarella, brie and ricotta. Soft cheeses typically don’t last as long as hard cheese.
